Quick Pickled Tomatoes

A very tasty appetizer that is quick and easy to prepare. The main thing is to use good tomatoes..
You can serve tomatoes with boiled potatoes.
Store tomatoes in the refrigerator, shelf life is about 1 week.
From the specified amount of ingredients, 2 jars of 500 ml are obtained.

  • 1 kg of tomatoes
  • 50 g greens (I have parsley and basil)
  • 50 ml vegetable oil
  • 30 ml vinegar 5-9% (I used apple cider)
  • 1 tbsp mustard (paste or whole grain)
  • 1 tbsp salt
  • 30 g sugar
  • 3-4 cloves of garlic
  • ¼ tsp ground black pepper


Finely chop the greens.

Mix oil and vinegar.

Add mustard.

Add garlic squeezed through the garlic press.

Add salt and pepper.

Add sugar.


Add greens.


Cut the tomatoes into slices about 1 cm thick.

Put a layer of tomatoes in a jar (or any dish).

Lay out fill.

Lay out the tomatoes.

Lay out the filling, again tomatoes, etc..
Refrigerate for 5-8 hours.
