Madelens with ginger and lime

Madelene is a popular French cookie. Crunchy on the outside and tender on the inside. Very delicious!
It is baked in shell-shaped molds. If there are no such molds, you can use any (preferably small), spread the dough about 1–2 cm, no more.
Madelens can be made with various fillers – nuts, candied fruits, dried fruits, poppy seeds. You can make them chocolate (add melted chocolate or cocoa to the dough). Can be sprinkled with chocolate.
In general, there is where to roam fantasy.
Madelens are incredibly fragrant with ginger and lime!
Instead of fresh ginger, you can use dried ginger, you need 1-2 tsp.
From the specified amount of ingredients, 20-25 pieces are obtained.

  • 3 eggs
  • 150 g sugar
  • 150 g butter
  • 150 g flour


  • lime (or lemon)
  • ginger (1 tsp grated)


Remove the zest from the lime.

Cut in small pieces.

Squeeze the juice out of the lime (you need about 50 ml).

Grate ginger on a fine grater.
We need 1 tsp. grated ginger.

Melt the butter.
Cool to room temperature.

Beat eggs with sugar until fluffy..

Add lime zest.

Add lime juice.

Add ginger.

Mix gently (at the lowest mixer speed).

Add flour.
Stir gently.

Add oil.
Stir gently.

Grease the molds a little with oil..
Put out the dough.
Put in an oven preheated to 180 degrees.
Bake for 10-15 minutes.
