Chocolate coconut cherry muffin

I bring to your attention a very tasty cupcake. Juicy, airy, very aromatic.
It is prepared very simply, and the result will surely please you.
Instead of cherries, you can use any berry (in cherry season, you can use it). If you use frozen berries, defrost them and drain all the liquid.
From the specified amount of ingredients, 6-8 servings are obtained.

  • 100 g butter
  • 100 g sugar
  • 4 eggs
  • 130-150 g flour
  • 2 tsp baking powder
  • 50 g coconut flakes
  • 20 g cocoa powder
  • 300 g pitted cherries


Grind butter with sugar.

Add eggs.


Add baking powder and flour.

Divide the dough into two parts.

Add cocoa to one part, add coconut flakes to the other.


The mold (I used a mold measuring 25 × 15 cm) grease a little with oil.
Lay out the dough with cocoa.

Lay out the cherries.

Spread out the dough with coconut.
Put in an oven preheated to 180 degrees.
Bake for 40-45 minutes.

Decorate to taste.
I poured icing on the cake, garnished with cherries, mint and coconut chips.
