Stuffed zucchini

I advise you to use just young zucchini. If you use old ones, then the skin must be cleaned.
You can use eggplant instead of zucchini..
From the specified amount of ingredients, 6 servings are obtained.

  • 1 kg zucchini (young)
  • 300 g minced meat
  • 100 g rice
  • 200 g tomatoes
  • 150 g cheese
  • leeks or 150 g onions
  • greens to taste
  • salt
  • pepper
  • vegetable oil


Boil rice until tender (as indicated on the package).

Cut the courgettes.

Take out the pulp.

Cut the pulp into cubes (not all of the pulp can be used).

Cut the leek into half rings (finely chop the onion).

Cut the tomatoes into small pieces.

Finely chop the greens.

Grate cheese on a fine grater.

Lightly fry the onion in vegetable oil.

Add minced meat.
Fry for 10 minutes.

Add zucchini.
Fry for 10 minutes.

Add tomatoes.
Fry for 5 minutes.

Add rice.
Salt, pepper.

Add greens.
Cool a little.

Stuff the zucchini with the resulting mass.

Sprinkle with cheese.
Put in the oven.
Bake at 180 degrees for 25-30 minutes.
