Delicate, airy like a cloud!
The classic Tiramisu recipe uses chicken eggs. If you are afraid to use raw eggs, you can replace them with quail (they are not prone to salmonellosis).

The specified amount of ingredients makes 6-9 servings.
- 4 eggs (I used 18 quail eggs)
- 100 g sugar
- 500 g mascarpone
- 250 g of Savoyardi cookies (about 34 pieces)
- 350 ml coffee (instant or brewed)
- cocoa powder
- 2-3 tbsp. wines “Marsala” (or any other), or rum, liqueur, brandy, cognac – optional
Separate the whites from the yolks.
Grind the yolks with sugar.
Whisk the whites into a strong foam.
Add proteins to yolk-cheese mass.
Dip sticks in cold coffee.
The sticks must be dipped in a very quick motion so that they do not get wet.
Make coffee the way you like (I added 4 tsp coffee for 350 ml).
Optionally, you can add wine, rum, liqueur, brandy, or cognac to the coffee.
Put sticks dipped in coffee tightly into the mold (I used a mold measuring 17 × 25 cm).
Put half of the cream on the sticks.
Put the sticks dipped in coffee on the cream again.
Put the remaining cream on sticks.
Refrigerate for 5-6 hours.
Sprinkle cocoa through a sieve.
Cut into portions.
Cut it very carefully, as the dessert is very tender.
