Marshmallow


Delicate, airy dessert that will not leave anyone indifferent.
Store marshmallows at room temperature.
From the specified amount of ingredients, 50-55 pieces are obtained.
Ingredients

  • 1 kg sugar
  • 25 g (2.5 tablespoons) gelatin
  • 15 grams (1 tablespoon) citric acid
  • 6 grams (1 tsp) vanilla sugar
  • 5 g (1 tsp) baking soda

Preparation

Soak gelatin in 100 ml of cold boiled water.
Leave for the time indicated on the package.

Soak sugar in 200 ml of cold boiled water.
Leave for 2 hours.

Put sugar on fire.
Boil, with constant stirring, for 7-8 minutes.
Remove from fire.

Add gelatin to the sugar.
Whisk for 10 minutes (beat on low speed).

Add citric acid.
Whisk for 5 minutes.

Add vanilla sugar.
Whisk for 3 minutes.

Add soda.
Whisk for 5 minutes.

You should get an airy dense mass, there should be a clear trace from the rim.
Let the mass stand for 10 minutes.

Using a cooking syringe (or spoon), put the mass on a baking sheet (I covered the baking sheet with baking paper, you do not need to grease the baking sheet).
Refrigerate (NOT in the freezer) for 3-4 hours.
